Tucked in the Sunnmøre Alps, between the northwestern mountains of Norway, lies the historically charming Union Øye Hotel. Here, 15 cozy rooms and 22 suites boasting warm Scandinavian decor open up to captivating views of the small hamlet of Øye, where the Norangsfjord touches the inland. Roam beyond the residence as ample adventures exploring the fjords, roaring waterfalls, and quaint pastures abound. When night falls, savour the piano playing in the lounges, or gather by the fireplace for stories of local folklore and the hotel's fascinating history - perhaps even a famous ghost story or two. Set to open this summer, three historical sixteenth-century buildings make up this twenty-one-room boutique hotel, which its owners artfully restored. The archaeological digs undertaken during restoration unveiled treasures such as the nave of an old church, which now sit on display in a small museum within the hotel. With its true Costa del Sol spirit and a rooftop cocktail bar to boot, the restaurant is poised to become a must-visit epicurean destination in the district. Opens July, 2022.

A castle complete with turrets and a moat, Kasteel van Ordingen offers an exquisite experience in both the history of its location and the gourmet selection of chef Gary Kirchens. Dating back to the eleventh century and partially demolished during the Second World War, Kasteel Van Ordingen was lovingly restored by talented architect Pieter Porters and current owner Richard Sleurs over a period of twenty years, with deep respect for its history and unique surrounding landscape.

Currently being renovated in the spirit of its history for opening in the spring of 2023, Le Domaine du Mouflon d'Or is nestled on forty-two acres of authentic Belle Époque estate in the picturesque village of Zonza. Unplug and wind down in one of the woodland sauna cabins, enjoy outdoor cinema screenings on warm summer evenings, or relax in one of the secluded shepherd's huts - all while soaking in the unobstructed views of the Bavella Needles.

Christophe Hay is a two-star chef, accomplished farmer, gardener, rancher, fisherman, and now the soon-to-be-open Fleur de Loire owner. With its 44 rooms housed in a historic building built on the orders of Gaston d'Orléans, brother of King Louis XIII, this former hospice is a fully eco-designed hotel blending refined warmth with timeless character. The dedication to environmental sustainability and responsible gastronomy shines throughout the establishment, with zero-plastic rooms furnished with eco-certified materials and local produce, including meats from the chef's ranch, featured extensively on the menu of the Amour Blanc restaurant. Opens June, 2022.
